There is no 'native' way to view a complete list as of yet, however the following workaround may help
1. Ensure GA2 is open
2. Goto My Computer
3. Goto Drive C:
4. Goto Garage Assistant V2
5. Double click on logs.sws or logs.fp7
A new window will open
1. Goto View and select view as table
2. Press Ctrl + F on the keyboard to enter find mode
3. Enter Email into the 'log' field and press Enter
This should now show a list of all documents which have been emailed and to what address, including time and date
It only shows the emails where 'email invoice / estimate' where used.
For info, this file is what is used to display the data under the settings tab on documents.
When you are finished, you may or may not be able to close the window, if you cannot goto
Window, then select Hide Window (since it remains open hidden by default)

In GA3 we have just added an option in to allow you to BCC (blind carbon copy) yourself the same email.
To set this up go to
1. Admin
2. Email Server Settings
3. Enter your email in the 'archive email address' field
Each email you send from GA will now be sent to that email also. The original recipient will not see the address entered here, so it can be anything you want.
In programs such as outlook you can set up email rules allowing you to do things such as
Move all emails with a subject of xx to Folder yy
So you should be able to set up some rules to organise them
